Cinnamon Roasted Butternut Squash

1 large butternut squash (peeled, seeded, and cubed)
1 1/2 Tbsp. olive oil
1 1/2 Tbsp. maple syrup
1 3/4 tsp. kosher salt
3/4 tsp. ground cinnamon
1/2 tsp. pepper
1 Tbsp. chopped fresh rosemary

In a large bowl, coat squash cubes with olive oil, maple syrup, salt, cinnamon, and pepper.

Spread the squash across two baking sheets prepared with cooking spray – do not overlap pieces. Bake for 15 minutes at 400°F; turn the cubes with a spatula and bake again about 10 to 15 minutes or until squash is tender. Sprinkle with rosemary, and enjoy.
