Spaghetti Squash Pasta

1 small spaghetti squash
½ cup sliced mushrooms
1½ cup kale or spinach
½ cup marinara sauce
2 Tbsp. vegan parmesan

Cut squash in half, removing seeds and strings. Place cut side down on a baking sheet lined with parchment paper and bake 45 to 60 minutes at 400°F, or until tender. Sauté mushrooms for 2 to 3 minutes, or until golden. Add greens during the final minute to wilt slightly. Warm sauce. Take a fork to the squash and rake lengthwise to produce long strands. Transfer strands to a bowl, mix in mushrooms and greens, and top with sauce and parmesan.

TV host, actor, producer, and comedian, Steve Harvey, was born on January 17, 1957, in West Virginia. He attended college but didn’t graduate. He had various jobs, including a boxer, autoworker, insurance salesman, carpet cleaner, and mail carrier. Harvey began performing stand-up comedy in the early ‘80s and struggled with homelessness for three years. He worked his way up, eventually performing on the Kings of Comedy tour along with Cedric the Entertainer and Bernie Mac, which was a big stepping stone to his success. He and his wife founded The Steve and Marjorie Harvey Foundation, a nonprofit organization focused on youth education.
